I don’t think I’ve met anyone who doesn’t like potatoes. Mashed potatoes are a common dish and are easy and sure to appeal to everyone’s tastes. If you’re like me and don’t have time for anything other than simplicity on those busy school nights, these Cheesy Mashed Potatoes may be perfect for you.
They’re much tastier (and more filling) than plain mashed potatoes with the usual salt and butter. These are creamy, flavorful, and have a prettier presentation than normal mashed potatoes, making them perfect for potlucks and holiday dinners.
BEST Cheesy Mashed Potatoes Recipe
- 5 pounds Yukon Gold potatoes
- 1/2 cup butter
- 2 cups Parmesan cheese
- 1 cup chopped fresh chives
- 1 1/2 cups cream cheese
- 1/2 medium head garlic, peeled and minced
- 1 pinch salt and pepper to taste
Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain and return to stove over low heat to dry for 1 to 2 minutes.
Add butter, Parmesan cheese, chives, cream cheese, garlic, salt, and pepper. Use a potato masher to mash until smooth, and serve.
