I don’t know about you but one of my all time favorite Italian dishes is Chicken Cacciatore. When it’s made correctly, it is out of this world delicious!! We have always eaten our Chicken Cacciatore with spaghetti noodles. Some people use rice. Which do you prefer?
To make this Chicken Cacciatore recipe you will need the following Ingredients:
• 2.5 pounds of chicken
• ½ cup of olive oil
• 1 clove of garlic
• 1 onion
• 2 carrots
• 2 stalks of celery
• 14 oz peeled and diced tomatoes (fresh or canned)
• A sprig of rosemary
• 1 cup of red wine
• Salt and pepper to taste.
First, wash, dry and cut the chicken into pieces. Now, place the pieces in a pan of hot oil to brown for at least 10 minutes.
Now, add the diced onion and garlic, diced carrot and celery, the rosemary, a good pinch of salt, and the pepper to the chicken. Let it cook for another 5-15 minutes.
After that add the red wine to the chicken. When it cooks off, it’s time to add the tomatoes cut into pieces.
Cover and let it simmer on a low heat for at least a half an hour. If it starts to look dry, just add a bit of broth or water as needed.
After everything is cooked, add the minced parsley to finish and you’re ready to serve your chicken cacciatore.
