This is a cross between a giant stuffed cookie, and a chocolate chip cookie crusted caramel pie. Either way, this Incredible Deep Dish Caramel Cookie is to die for! Each slice is absolutely heavenly. The cookie is soft, yet holds its shape. The inside is a thick layer of super gooey caramel and melted chocolate chips.
One piece of this amazing cookie isn’t going to be nearly enough for anybody! It’s hard to stop eating this after you’ve started. This may be the greatest, richest, and most incredible dessert I have ever had! I made it for the first time a little over a month ago, and I’ve made it three other times since!
Every time I get the chance, I make this because everyone adores it. I also like to bring along a gallon of vanilla ice cream because it goes perfectly with this warm, gooey cookie. If you’re sharing it with a few friends or family members, don’t even waste time slicing this. Give everyone a spoon and start digging in! It makes a lot of food, but you will have no problem finishing this off. It’s irresistibly good.

- 1 bag square soft caramels
- 1 bag chocolate chips
- 2 tubes cookie dough
- Vanilla ice cream
- Unwrap caramels and microwave for 45 seconds and stir until smooth.
- Press 1 tube of cookie dough evenly in bottom of pan
- Pour melted caramel on cookie dough
- Generously sprinkles chocolate chips on caramel.
- Top with another layer of cookie dough (1 tube)
- Bake at 350 F for 30 min
- Top with vanilla ice cream if desired.
