This Amazing Holiday Cranberry Cake Recipe is absolutely DELICIOUS! This cake reminds me of Thanksgiving as well as Christmas but it is sure to be devoured at either holiday dinner!
The cake turns out extremely light, fluffy, and moist and is the perfect consistency for a cake and is made even better with the addition of fresh cranberries! Be sure to coat them in flour before adding them to the batter, that way they don’t sink to the bottom of your cake! If you do this, you’ll end up with a beautiful cake that has cranberries bursting with flavor in every bite you take.
My family loves this and always requests that I bring it! The secret to getting this recipe to have the perfect flavor is the addition of the orange juice and orange zest. It gives just a hint of orange to the cake and makes it irresistible! It’s almost impossible to have only one slice of this divine holiday cranberry cake!
Cook Temp: 350 Degrees F – Cooking Time: 25 Minutes
- 1 cup plus 2 tablespoons cake flour, plus more for dusting the pans
- ½ cup whole milk, at room temperature
- 3 large egg whites, at room temperature
- 2 teaspoons orange juice
- 1-1/2 cups granulated sugar (plus 2 tablespoons to coat cranberries)
- 2 teaspoons baking powder
- ½ teaspoon salt
- 6 tablespoons unsalted butter (3/4th stick), softened but still cool
- 1 tablespoon orange zest
- 6 ounces or 1-1/4 cups or ½ of a (12 ounce) bag fresh cranberries
- 2 tablespoons flour
