A few weeks ago, we went to a quaint little mexican restaurant downtown with some friends and one of the appetizers was something they called “Albóndigas”, or a Mexican Meatball Slider. They were so tasty with just the right amount of spicy kick to them. I was determined to find a recipe for them that was as close to the flavors we had savored when we first tried them.

Ingredients for Mexican Meatball Sliders
1 lb lean ground beef
1 lb chorizo (Mexican pork sausage)
1/2 c crushed tortilla chips
16 oz jar of chunky salsa
29 oz can of tomato sauce
1 tbsp chili powder
dinner rolls (Kings Hawaiian)
cilantro and queso fresa to garnish
