Microwave Mug cakes are a ton of fun and are such an easy dessert or snack. These personal cakes are made right in your microwave and eaten out of the same mug they’re cooked in! I’ve tried plenty of delicious mug cake recipes, but this Raspberry Ricotta Microwave Mug Cake is one that I always look forward to making whenever I have some ricotta in the house. This super moist and soft cake tastes amazing warm. It’s buttery and filled with the flavors of maple syrup and raspberry. I add a few more raspberries than the video demonstration shows. Top this with some powdered sugar or whipped cream after it’s done cooking, and this recipe is absolutely HEAVENLY!
Make sure you use a big enough mug because the cake will rise some. If you don’t want it to overflow like the video shows, then make sure you use something bigger than a teacup! You could make one of these yourself and settle down to watch a movie, or you could make enough for your whole family and enjoy these at the table after dinner. In my home, everyone has their own giant mug for mug cake recipes. This way, we can all enjoy mug cakes when we have a bit of time and room for dessert after dinner.
- Melted butter
- Maple syrup
- Powdered sugar
Whisk ¼ cup each flour and ricotta, 2 tablespoons each melted butter and maple syrup, and 1 large egg. Top with ⅓ cup raspberries. Microwave on high for 2 minutes. Dust with powdered sugar and serve immediately. Serves 1.
