Raspberry White Chocolate Shortbread Cookies Recipe

These Raspberry White Chocolate cookies are perfect for parties and family gatherings because they’re elegant and display a deep red coloring in the center of the cookie. I love using the heart shape that’s demonstrated in this video, but you can use stars or any other shape cookie cutter you may have.

The homemade raspberry jam could be substituted with a store bought raspberry jam, but the recipe for this homemade jam is absolutely incredible and I wouldn’t change a thing. You could also put a completely different spin on this cookie and fill it with a different type of jam, such as apricot, cherry or blueberry.

The buttery shortbread and sweet white chocolate taste amazing along side of the tangy raspberry jam. These cookies are absolutely beautiful and taste divine! This is the perfect cookie so try this easy recipe and treat everyone to this sensuously delicious dessert!

Cook Temp: 350 Degrees F  –  Cooking Time: 10 Minutes 

INGREDIENTS:

Shortbread Cookies:

2 cups (260 grams) all-purpose flour

1/4 teaspoon (1 gram) salt

1 cup (225 grams) butter, at room temperature

1/2 cup (60 grams) confectioners sugar (also called powdered or icing sugar)

1 teaspoon (4 grams) pure vanilla extract

Filling:

1/2 cup (120 ml) raspberry jam (store bought or homemade (recipe below))

2 ounces (60 grams) (1/3 cup chopped) white chocolate, melted

Raspberry Jam:

1 1/2 teaspoons (5 grams) powdered fruit pectin

1 cup (200 grams) granulated white sugar

1 – 12 ounce bag (340 grams) frozen unsweetened raspberries

1 tablespoon (10 grams) freshly squeezed lemon juice
