Extra Crunchy Fried Chicken

Everyone loves fried chicken, but how many times have you attempted to make fried chicken at home and it comes out soggy or not as crunchy as you had hoped? If you like crunchy fried chicken you are going to love this super delicious extra crunchy fried chicken recipe that includes a secret ingredient you may never have thought of using. This is what makes the chicken extra crunchy. Southern folks make some of the best fried chicken I have ever tasted and this recipe is no exception. It was delicious!!

Extra Crunchy Fried Chicken Recipe

Ingredients: 

  • 8 chicken pieces
  • 1/2 cup instant mashed potatoes (secret ingredient)
  • 1 cup of flour
  • 1 tablespoon of salt
  • 1 tablespoon of onion powder
  • 1/2 tablespoon of garlic powder
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of dried mixed herbs
  • 1/4 teaspoon of cayenne pepper

Egg Wash Ingredients:

  • 2 eggs beat well
  • 1 tablespoon of water

Instructions:

Mix all dry ingredients in a bowl and set aside.
Mix eggs and water in a bowl and set aside

Next, take a piece of chicken roll it in the egg wash, then into the flour mix making sure to coat it well.
Continue this process until all pieces are coated in flour.

Extra Crunchy Fried Chicken

Set the plate of floured chicken aside for 20 minutes and then repeat the process of egg wash and flour a 2nd time which allows for a thick coating that will help make the chicken super crunchy. After coating all the chicken pieces twice, set aside for another 20 minutes.

Begin to heat your pan of oil, using canola oil (or oil of choice) to 180 degrees Celsius (350 degrees Fahrenheit)

Begin to gently add in half of your chicken pieces, careful not to overcrowd the pan.

Cook for 15 minutes for parts such as drumsticks, wings and thighs and if you use breasts it is best to cut them in half prior to frying because larger pieces of chicken tend to take longer to cook and the outer coating gets overcooked before the chicken is thoroughly cooked.

Turn the chicken every 3 to 4 minutes to ensure even cooking.

Extra Crunchy Fried Chicken

When it’s done remove the chicken and set on a rack to allow any excess oil to drain off.

Now add the remaining chicken pieces until all your chicken is done.
