Sweet Honey Roasted Carrots sounds like a way to make an okay tasting vegetable sound like something much more desirable. However with this recipe, it doesn’t just make carrots sound better, it makes them taste sweet, flavorful, and delicious!
I struggle so much trying to get my family to eat carrots. I’ve thrown them in soups, pot roasts, pastas, etc. and my kids consistently pick them out of every dish I put them in. When I made this recipe, I told them each they had to try one. Beyond what I had imagined would happen, they ate way more than one!
I have to admit, these taste way better than regular cooked carrots. If you’re looking for a yummy and healthy recipe for a snack or a side dish for a dinner, these Sweet Honey Roasted Carrots are a GREAT vegetable recipe!
Cook Temp: 400 Degrees F – Cooking Time: 20 Minutes
- 3 lbs carrots, peeled and sliced
- 3 Tbsp olive oil
- Salt and freshly ground black pepper
- 3 Tbsp honey
- 1 1/2 Tbsp apple cider vinegar
- 2 1/2 Tbsp chopped fresh parsley
- 1 Tbsp fresh thyme leaves
Preheat oven to 400 degrees. Place carrots in a mound on a 17 by 12-inch rimmed baking sheet. Drizzle with olive oil and season with salt and pepper and toss to evenly coat. Spread into an even layer. Roast for 20 minutes, remove from oven. Stir together honey and apple cider vinegar. Drizzle carrots with honey mixture and toss well to evenly coat. Return to oven and roast about 10 to 20 minutes longer. Remove from oven, toss again and sprinkle with fresh parsley and thyme. Serve warm.
