Unbelievable Thai Inspired Peanut Noodle Pasta Salad!

When I picture a pasta salad I usually picture spiral noodles and a tangy Italian dressing sauce. This Peanut Noodle Pasta Salad definitely puts a spin on traditional pasta salads. It’s served cold, filled with vegetables, and has tasty flavors of peanut butter, soy sauce, and sweet brown sugar that contrasts nicely with the peppers. The different colored bell peppers are optional but they give more color and flavor to the dish. Since this is served cold rather than hot, you can bring it to parties or make it hours before it’s needed.

I love to throw some additional peanuts on top for presentation and extra crunch. In my opinion, whole grain pasta tastes just as good as regular noodles so I always try to use whole grain when I can. They’re much healthier which goes perfect with this healthy pasta salad. Ginger is another flavor that you can pick up on while eating this. It’s sweet, tangy, and has a bit of spice from the peppers and sriracha.
