If you’re not familiar with Cloud Bread, it is a healthy no carb, gluten free way to have your bread and eat it too! Ironically, it’s not really bread at all, but if you’re one can’t eat bread like me, you are going to love this recipe because it feels like cheating but it’s NOT!
No more cardboard bread alternatives! Cloud Bread is soft, light and quite delicious dunked in soups or in place of sandwich bread when that ravenous sandwich craving hits you square in the face!
This recipe is a modified version of the one found on Eating Well Living Thin.
* Before you begin prepping the dough:
- Preheat oven to 300 degrees.
- Line baking pans with parchment paper and put them in the over to get hot. This is important in order to get evenly cooked results.
- 3 eggs, (separate white and yolks into 2 separate bowls)3 ounces cream cheese (pre-softened to room temperature)1/2 teaspoon granular Stevia (or sweetener of your choice like honey)1/2 teaspoon gluten free baking powder (can substitute with 1/8 teaspoon of cream of tartar)Dash of salt
Begin by adding the cream cheese, salt and sweetener to the 3 egg yolks, whisk until everything is mixed well and no lumps remain.
Now add the baking powder to the 3 egg whites, using a hand mixer, whip until the mixture is fluffy and the peaks are nice and stiff. Be careful not to over whip, but just enough that when you remove the mixer, the peaks remain stiff without collapsing.
Next, using a spoon, slowly fold in the fluffy egg whites into the yolk mixture and gently combine, just enough to blend into a light yellow mixture is achieved.
Now remove the baking pans from the over and lightly coat the parchment paper with your choice of non stick cooking spray.
Using your spoon, drop a small portion of mixture onto the pan and gently spread into a circular rounds and bake for 15-20 minutes. If you want to make larger pieces, you may need closer to 30 minutes. You know your over best, if yours tends to get a little hotter, you may need less cooking time. The trick is to watch them the first time you make them and remove them when they are a light golden brown.
